 Lobster Bisque

Lobster Bisque

1 stick butter
1 cup finely chopped onion
1/2 cup finely chopped celery
1/2 cup finely chopped carrots
1/2 cup chopped fresh mushrooms
(2) 14.5 ounce cans chicken or seafood broth
1/2 teaspoon salt
1/2 teaspoon cayenne pepper
3 cups half and half

Melt butter in a large sauce pan over medium heat. Add veggies and saute until tender, about 10 minutes. Add broth and bring to a boil, then reduce heat and gently boil for about 10 minutes. Remove from heat, cool a little, then pour into a blender with 1/4 cup of the lobster meat. Blend until smooth. Return to the saucepan, add half and half, then cook over low heat, stirring often for about 30 minutes, until thickened. Add cooked lobster meat and warm through. Garnish with chopped parsley.
