Curry Crab Crispelle
1 1/2 sticks salted butter
2 shallots chopped
2 cloves garlic minced
1 teaspoon curry powder
1 pound crab meat
1 tablespoon fresh parsley chopped
juice of a lime
1/2 teaspoon salt
1/2 teaspoon pepper
10 sheets phyllo dough
1/2 cup dry bread crumbs
Preheat oven 400°
Melt 2 tablespoons butter in a pan, add the shallots, garlic and curry powder; saute until tender. Set aside.
Mix shredded crabmeat, parsley, lime juice, salt and pepper. Combine with shallot mixture. Set aside.
Unfold one sheet of phyllo dough, brush with butter and sprinkle with bread crumbs. Place another sheet on top and repeat process until five sheets are stacked. Put 1/2 of the crab mixture along the edge of the stacked phyllo dough, then roll it up and brush with butter. Make another roll repeating the process. Score the roll and bake for 12 minutes or unti the top is golden brown.
