Hasselback Baked Potatoes
1 stick butter (room temperature)
1/2 cup olive oil
1/2 cup chives finely sliced
freshly ground salt & pepper
6 baking potatoes washed
Preheat oven 450°
Mix together softened butter, olive oil, chives, salt and pepper. Slice the potato into thin slices leaving 1/2 at the bottom unsliced. Place the potatoes on a baking sheet and brush with the butter mixture; getting in between all the slices. Bake until tender and crisp for about an hour.
