Spicy Soda Pulled Pork
Pork Shoulder, seasoned with salt and pepper
1 large onion, cut into wedges
7 oz chipotle peppers in adobo sauce
2 cans dark soda (not diet)
2 tablespoons brown sugar
Preheat oven to 300° or use crockpot. Place onions in the bottom of pot, then the roast, peppers with adobo sauce, soda and brown sugar. Cook for at least 6 hours (overnight is good too!). Meat is done when it is completely falling apart. Shred, while removing fat. Reserve the cooking liquid that has been separated from fat (put into freezer for a half hour and it will completely separate the fat, making it easy to spoon off), then reduce it by 1/2 and put into pork to keep it moist and flavorful.
This recipe is great for tacos or pulled pork sandwiches. It’s super tasty with Cilantro Ranch Dressing and Quick Pickled Onions.
