Korean Stir-Fried Squid (Ojingeo Bokkeum)

Korean Stir-Fried Squid (Ojingeo Bokkeum)

2 tablespoons minced garlic
1 1/2 tablespoons minced ginger
3 tablespoons soy sauce
1/2 cup gochujang sauce
2 teaspoons rice wine vinegar

1 pound squid, cleaned and chopped into bite size pieces
4 tablespoons cooking oil
1 medium onion, chopped into bite sized pieces
1 medium red or orange pepper, chopped into bite sized pieces

In a bowl, mix together first five ingredients. Add the squid to the sauce and let marinade for 20-30 minutes.

Stir fry onions and peppers in the oil until softened but still with a bit of crunch. Add squid and sauce and cook for 90 seconds to 2 minutes. Any more and the squid will get tough! Serve hot with rice.
