Miso Mushrooms & Cabbage (Beosot Muchim)
3 Tablespoons cooking oil
12 oz mushrooms (trumpet/oyster or a mix) chopped into bite size pieces
6 oz napa cabbage chopped into large bite size pieces
2 teaspoons minced garlic
4 teaspoons sesame oil
3 tablespoons miso paste
Heat oil in a large skillet over medium high heat. Add mushrooms. Cook for 1 minute then cover and cook for an additional 2 minutes. Stir in cabbage and garlic and cook for 3 more minutes. Remove from heat and stir in sesame oil and miso paste. Serve hot.
