Parmesan Chicken

Parmesan Chicken

4 boneless skinless chicken breasts
½ cup mayonnaise
½ teaspoon paprika
1 teaspoon minced garlic or ½ teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup shredded parmesan cheese
1 cup panko crumbs

Mix mayonnaise, garlic, paprika, salt and pepper and whisk together. Place parmesan and panko crumbs in another shallow bowl. Coat each piece of chicken in mayonnaise mixture, then place in parmesan/panko mixture. Make sure the chicken is completely covered. Gently press, then turn and repeat on other side. Repeat with remaining chicken.

Bake on a sheet at 350° for 30-35 minutes. May be served with chicken gravy and garnished with fresh chopped parsley, but it is great plain and super crispy.
