Coconut Shrimp
Batter:
1 1/2 cups flour
1/2 teaspoon baking powder
1/2 teaspoon paprika
1/2 teaspoon curry powder
1/4 teaspoon salt
1/4 teaspoon cayenne pepper
2/3 cup beer
Combine ingredients, may need a little more beer to have consistency of pancake batter.
1-2 pound large raw shrimp, peeled, deveined with tails
Dredge shrimp in flour, dip in beer batter and rollin unsweetened flaked coconut.
Fry shrimp in hot oil until golden brown. Sprinkle with salt.
Orange dipping sauce:
1 jar orange marmalade
1-3 tablespoons horseradish according to your taste
3 tablespoons seasoned rice vinegar
