Chocolate Ice Cream
1/2 cup unsweetened cocoa powder
3 cups half and half
1 cup heavy cream
8 egg yolks
1 cup sugar
2 teaspoon vanilla
In a saucepan, whisk the cocoa powder into the cream and half and half. Bring to a simmer and remove from heat.
In a mixing bowl whisk egg yolks until they lighten up; add sugar and whisk until combined. Temper the cream mixture into the eggs by adding small amounts until about 1/3 of the cream mixture has been added; then pour in the remainder and return to the saucepan over low heat. Cook until thickens and coats the back of a spoon. Add vanilla then allow to cool in the fridge fo a few hours. Pour into ice cream maker and process.
