Pork Tenderloin with Plum Sauce
Tenderloin:
pork tenderloin
olive oil
spice rub of your choice (Gourmet Collection: Ginger Lemon Sriracha)
Rub olive oil on tenderloin and sprinkle on seasoning. Get skillet hot with olive oil and sear on all sides, then place into a 350° oven and cook to 160° internal. Let rest before serving. Cut into slices and serve with plum sauce.
Spicy Plum Sauce:
1 jar Smucker’s plum jam
1/2-1 teaspoon red chili paste
1/4 cup soy sauce
1/4 cup seasoned rice vinegar
1 teaspoon chicken soup base
Combine above ingredients in a sauce pan and heat over medium until everything is melted and combined. Simmer for a few minutes, then serve over pork tenderloin. This goes great with Calrose rice and a bright green vegetable.
