! cauliflower head, large florets
3 tablespoons butter
3 tablespoons flour
2 cups hot milk
1 teaspoon salt
1/2 teaspoon pepper
1 cup gouda cheese, grated
Topping:
1/4 cup panko bread crumbs
1/4-1/2 cup gouda cheese, grated
2 tablespoons butter, melted
Preheat oven 375°
Place cauliflower florets in salted boiling water for about 5 minutes, until tender but firm.
Melt 3 tablespoons of butter in a saucepan over medium heat. Add the flour and stir constantly for 1 or 2 minutes. Pour the hot milk in and whisk until it comes to a boil and thickens. Take off heat and add salt, pepper and 1 cup gouda cheese. Pour a little of this sauce in the bottom of a square baking dish, then place drained cauliflower on top. Put the rest of the sauce evenly on the cauliflower.
Combine panko bread crumbs with 1/4-1/2 grated gouda cheese and sprinkle in top of the gratin. Drizzle with melted butter and sprinkle with salt and pepper.
Bake 30 minutes. Topping should be golden brown.
